Vegetable Wrap for Two

 

Ingredients

½ Cup Cooked Pinto Beans

½ Cup Swiss Chard

½ Onion

½ Romaine

½ Tomato

1 Celery Stalk if preferred

4 Organic Fajita Wrap

3 heads of Garlic

½ Teaspoon of Tumeric

3 Tablespoons of Water

1 teaspoon Oregano

1 Teaspoon Sesame Seed Oil

1 Teaspoon Balsamic Vinegar

 

Peel Garlic, mix with Oregano and

salt in mortar and crush.  Use half for the beans

 and half of it for the Chipotle dressing set aside.

Place 1 teaspoon of Sesame Seed Oil in a medium

size pan add half of the chopped onions, garlic and

oregano until slightly brown. Add the lightly Crushed

beans and 1 ¼  cup of water and bring to a boil then add the dash of salt, and the vinegar cover and simmer for 5 minutes.  Mix half of the oil and lime juice for the dressing.  Mix the rest of the greens.  Warm up the fajitas for 30 seconds on each side.

 

TO SERVE: Place 2 tablespoons of beans on the fajita cover with the veggies, then the fresh Chipotle dressing.  Enjoy!
